Zucchini Bread and Sugar loaf

Every now and then I go through something like baking withdrawal, where I'm overcome by the intense desire to stay in the kitchen and throw goopy healthified ingredients delicious wholesome concoctions from mixing bowl to oven all day. And by all day I mean a few hours. And by a few hours I mean 3, which results in complete and total kitchen destruction. cleanli mess? Cleanliness. I go through all of our baking supplies and think of what I can make on whim, so naturally when I'm done it looks like a cafeteria food fight has just occurred super sparklingly-clean.
This time, however, I actually used recipes.

But first:

I started the day with black coffee.


Then
ran a few errands, etc.
ran some trails
ran some trails
made a ransom with sugar

just a lot of running lately.

Then came home and made gluten-free zucchini bread and vegan peanut butter banana bread

So a word about the former: even when you think it would be an adorable idea to use muffin tins instead of a bread pan...you should not do it. Because you will end up with bread-y stuck-to-the-side muffins. Which is kind of obvious, but just in case you have certain lapses in judgment like i do... just stick to the recipe.

Grate zucchini


Make almond flour


Separate whites and yolks


Cream of tartar, aluminum free baking powder, cin&nutmeg, salt


Batter.



Bake.


Bite.

So these are definitely not of the slightly sweet-cinnamon-y variety of zucchini bread that I was going for - but all in all they weren't bad, and had minimal sugar.


I guess to make up for it's lack I made this sugar-ful loaf. It is crazzyyy filling tho - like the kind of indulgence that does the job - decadent, delicious, and definitely not allowing you to have room for more.

However next time, instead of brown sugar (yes. I . used. brown. SUGAR. so shoot me.) I think I'll just use a few more banana's and maybe another apple.
To keep it uber healthy, ya know.
This is definitely a dessert!

In fact, it's practically gone now cos everyone lurved it.
(wish i could say the same for the zucchini bread)

Then the madre even baked a blackberry cobbler, which looks pretty decadent:

But Im a bit over-sugared today.


Dinnah was green beans, the last bit of hummus, chicken and tomato.
And vino.





These ^ are just a few of the reallllly exciting things that happen in my parents household.



Anyways, now I'm off to read & relax and get ready for this semesterrr.
